Aroma, flavour profile and finish:
Hints of vanilla, flamed cherries and earthy undertones with dark fruit, savoury, toasty oak on the palate. Dry firm tannins , with a full rewarding finish.

Food pairing :
Aged fillet of beef, char-grilled, smothered in creamy wild mushroom sauce.

Description:
Ageing : 5-20 years
Blend : 55% Cabernet Sauvignon 45% Cabernet franc

Fermented in open fermenters with plunging and pumping over occurring twice daily for maximum extract. Aged in French first fill barrels for two years before being bottle aged for another 24 months. Patience and time makes all the difference.
Only produced and released in selected vintages.

Harvest : Hand selected bunches from dry land vineyards with controlled ,low yields. Gently handpicked into small crates to preserve the freshest juice from the small berries.
