Appellation: Wine of Origin Darling
Fermentation: Fermented at a lower temperature to affect a longer fermentation period. Regular punch down to extract maximum colour and flavour. Some whole bunch grapes added to fermentation which enhances the complexity of the wine.
Maturation: Barrel aged in 2ndand 3rdfill French Oak for 11 months to preserve and enhance the grape flavours.
