Aroma flavour profile and finish:
An explosion of tropical fruit with gooseberry and ripe figs being prominent. Striking minerality and savouriness on the palate with gentle green pepper undertones.
Food pairing :
Fresh crayfish, gently steamed and served with a dollop of chunky tartare sauce.

Ageing : 2-8 years
Blend : 100% Sauvignon Blanc
Cellar : Whole bunch pressed to collect only the free run, purest juice. This is a time consuming process requiring much patience, the reward a wine of immense elegance.
Cold fermented and further two months lees contact.
Harvest : Hand-picked from dry land vineyard. Delivered to the cellar in small boxes.
